Well my dear friends, did you all think I had left blogging?  No, I have not, just have been so terribly busy this past week.  Please do not tell anyone that my schedule is almost clear this week - lol.  Well in this business, there has been a lot of cooking going on.  One day was banana muffins, and then I had a neighbor show up, and I missed the picture of the batter in the pans before putting them in the oven, but they will be posted anyways.  Then we had Halloween and unbaked cookies were made again.  So I will post a photo of those to show you.  Then it was shop and bake and decorate for the dessert banquet, and it was so busy, that I didn't get to get pictures of the tables that I decorated.  But all in all - it was a success and a fabulous time, and a great blessing!!!

So today, I am going to post the pictures of the unbaked cookies with the little ghosts on top, and then I will share the recipe for the cake I made for the dessert banquet and of course - the pumpkin poppers were a huge success there also!!! So let's get started!!!  Oh yes, the sugar cookies on the tray with the unbaked cookies were cheaters cookies.  They were the kind you just cut and cook from Aldi's - I believe they are Baker's Corner Brand.


These cookies look thicker because we used old fashioned oats
rather than the smaller quick cooking oats, and the peanut butter
was smooth rather than chunky.

My apologies to my friends who do not celebrate Halloween, but I do this for my niece and nephews for their dinner party with friends.

This cake recipe came from my dear friend Lauri!!  She is a wonderful woman and is the mother of 13 beautiful children, and has become a beautiful cook!!!  This cake was originally called Lauri's Pistachio Pudding Pound Cake, but has become Lauri's Double Chocolate Pudding Pound Cake to Lauri's Double Vanilla Pudding Pound Cake - to whatever you want to make it!!! - Love recipes that you can make to be your own!!!  Thank you Lauri, and I miss you!!!

Lauri's Pudding Pound Cake

1/2 cup milk
1/2 cup oil
1/2 cup water
5 eggs
2 pkgs instant pudding mix of your choice ( pistachio, chocolate, french vanilla, butterscotch, etc)
1 pkg cake mix - a 2 layer cake mix - of your choice ( white, chocolate, double fugde, yellow, etc)

Note: I used 1 cup of milk to make a denser cake rather than 1/2 milk and 1/2 water.

Place first 3 ingredients in large bowl, and beat at medium speed until combined.  Add eggs and beat for 2 minutes.  Add puddings and cake mix, beating until smooth.  Pour into a greased bundt pan or 10 inch tube pan.  Bake at 350 degrees F for 55 minutes.

This cake can be iced or served with whipped topping.  I know when you make the pistachio pudding cake - we call it green cake so a great idea for St. Patrick's Day, it is wonderful served with just whipped cream.

Glaze

1 tub of frosting

Place tub of frosting - opened and without foil on the lid - into microwave for 30 seconds on HIGH.  Stir to make smooth, and pour over top of cake and allow it to flow down the sides of cake.

Ingredients - well minus the empty bottles and the EVOO - lol

Milk, oil and eggs

Blending in puddings and cake mix.

Prepared pan

Mixed batter


Nice and thick and ready for the oven.

Taadaa!!! Love the cracked spot - looks so yummy!

Rises nice and high!! I leave it about 5 minutes in the pan
before I remove to the cooling rack.

And of course - pictures of the pumpkin poppers that have already been posted for the recipe!!  A triple batch of these made 104 of these little guys!!





Amazing what a hit these are!!!  Men especially seem to like them - maybe because most men like donuts - lol.
