Hello my friends!!! Well, woke up to a beautiful, sunny,warm morning this morning, and here it is now, dark and windy and getting cooler...maybe we are going to get snow this weekend like they are thinking. I hear North Dakota and Minnesota have the possibility of having 6 - 10 inches of snow this weekend!!! I remember the year we got that much in May when I lived in Nova Scotia. Ok, enough about the weather, let's go on to what was made for dinner last night. Yes another crockpot dinner!!!
So here we go, enjoy!!!
Crockpot Steak and Baby Carrots
3 lbs of beef steak
1 envelope onion soup mix
2 sweet onions
1 and 1/2 cups fat free, low sodium beef broth ( I didn't have any, so I used chicken broth)
1 pound bag of baby carrots
Pour broth into crockpot, turning crockpot on high. Place steaks in, shaking on some onions soup mix on each layer...if they overlap. Peel sweet onion and cut in quarters. Cover crockpot and cook for an hour and a half on high. Turn down to low for about 3 hours, and then turn back to high about an hour before eating, adding the baby carrots at this time. We like our carrots with still a little crunch, and not mushy, so this is good timing for us. If you like your carrots cooked more, then put them in maybe for an extra half hour.

I hope you all have enjoyed this...if you wanted to add potatoes, you would need to add them so much earlier than the carrots - I seem to have troubles getting potatoes to cook, or they cook fast and then they are too done - lol.
