Good afternoon family and friends.
   Right now it is very dark and grey, and they say we could be in for a storm of hail up to an inch and winds and deadly lightning - to quote, but I do not believe we will get it that for it is forecasted for those north of us, but it has finally started to rain a wee bit.  So what is with the weather forecast you say, well, this kind of day made me think that I need to post some nice comfort food.  So today, I am going to post a muffin recipe.  Hope you all enjoy these as much as we have!!

Apple Muffins

3/4 cup butter ( I used margarine )
1 and 1/2 cup white sugar
3 eggs
1 and 1/2 teaspoons vanilla extract
3 and 1/2 cups all purpose flour
1 and 1/2 teaspoon baking powder
1 and 1/2 baking soda
3/4 teaspoon salt
1 teaspoon cinnamon
1 and 1/2 cup sour cream
1 (21 oz) can apple pie filling ( if in slices, I suggest you chop the apples - they have a tendency to fall to bottom and so the bottoms)

1/4 cup white sugar
1/2 teaspoon ground cinnamon ( I just used premixed cinnamon sugar from like the Dollar Store )

Preheat oven to 350 degrees F. Lightly grease and flour or line 24 muffin cups. (As you can see I do jumbo muffins and I got 12 jumbo and the little bread from it)

In a large bowl, cream together butter and 1 and 1/2 cup white sugar. Beat in eggs and vanilla. Combine flour, baking powder, baking soda, and salt. Stir into the creamed mixture alternately with sour cream. Fold in apple pie filling. Spoon batter into prepared muffin cups.
Combine the remaining sugar and cinnamon; sprinkle over the muffins.
Bake in preheated oven for 16 - 18 minutes, until a toothpick inserted into the center of muffin comes out clean.
Enjoy!!!! Almost like apple pie when eaten warm!!!!

These apple muffins fit right well in my apple kitchen!!

The bread was really nice - have to cut the slices fairly thick tho
due to the moistness and the apples!!!

  1. So sorry about the mistakes folks... this should be that I chop the apples because they tend to fall to the bottom of the muffin and make the bottoms soft...ugh thank you Teresa for pointing this out.
