Today, I decided to try a new recipe that I had pinned on Pintrest.  This recipe was simple, and very tasty!!!  My guest enjoyed it also, so that always makes a new recipe nice!!!
This is my first posting on my blog, so please forgive that it is not very organized, I am still learning how to do this.  Hope you all enjoy!!!


Apple Enchiladas

Ingredients

1 (21 oz) can of apple pie filling - may also use cherry or peach
6 (8 inch) flour tortillas
1 tsp ground cinnamon
1/2 cup butter
1/2 cup white sugar
1/2 cup brown sugar
1/2 cup water

Preheat oven to 350 degree F.
Spoon about one heaping quarter cup of apple pie filling evenly down the center of each torilla.
Sprinkle with cinnamon; tucking in edges, place seam side down in buttered pan.
In medium saucepan, over medium heat, combine butter, white sugar, brown sugar and water. Bring to a boil, stirring constantly; reduce heat and simmer for 3 minutes.
Pour sauce over enchiladas and let stand for 45 minutes.
Bake in preheated oven for 20 minutes, or until golden.
Serve with vanilla ice cream or whipped topping.

You will probably notice on mine, I sprinkled a little more cinnamon sugar that I made - well we always sugared the top of our pies ;)
Stage 1 : Enchiladas wrapped and in buttered pan
and yes, I do know how to count just didn't.

Stage 2 : Sauce made and poured over them
now to rest for 45 minutes.

Close up to show I sprinkled cinnamon sugar on them.

Stage 3 : The final product out of the oven after
25 minutes.

Plated without the ice cream but I could just
picture how nice it would look with the ice cream
melting over the enchilada and a little of the warm
syrup over top of the ice cream.
