What is cooking in your kitchen for dinner tonight. Here in my kitchen, it will be Chicken Stir-Fry, or as my hubby calls it, Chicken Stir-Boil. LOL He calls it a boil rather than a fry, because I use some low fat chicken broth, rather than olive oil. My stir-fry includes chicken breast, onions, mushrooms, baby carrots ( love getting the small ones so you don't even have to slice them!!) and near the end, add a can of green string beans. Mmmmm, so tasty!!!!
The recipe I have decided to share today, is a recipe I got from a young lady whom I used to babysit, but is now all grown up and a college graduate!!! Boy, do I feel old!! Thank you, Lou, my family LOVES your recipe, and whenever there is a family function - they are the "if you don't have them, then don't bother coming" item. LOL I love this recipe for unbaked cookies, because I use them for every season occassion, and make them fit the occassion. The pictures I am going to post with this recipe are from Easter one year.
Lauri Lou's Peanut Butter NoBake Cookies
2 cup sugar
1/2 cup margarine
1/2 milk
1/4 cup cocoa powder
Mix together and bring to a boil on the stove. Stir constantly to avoid scorching. Remove from heat, and cool for 2 minutes.
Then add and stir in :
pinch of salt
1/2 cup chunky peanut butter
1 tsp. vanilla
3 cups oatmeal
Drop by spoonfuls ( tablespoons) onto wax paper. Let cool to set.
I usually pack these in an airtight container, or in a Ziploc bag and keep then in the refridgerator where it is cool.
One very important NOTE: These cookies are best made in single batches, but can be made in a double batch.
As you will see by the pictures following, you can decorate these however you like!!! And you can make them as large as you like!!! These were more than one batch of cookies.
